Sweet 'N Spicy Jicama Parsnip Slaw
Ingredients
1 large jicama peeled
2 medium parsnips peeled
1-2 tablespoons fresh ginger grated
2 tablespoons fresh lemon juice
2 tablespoons coconut oil
1/2 cup apple juice
1 apple

Directions
Cut jicama and parsnips into large chunks and shred in the food processor.
Transfer to a mixing bowl and add other ingredients except the apple. Thoroughly mix.
Slice the apple and use as a garnish. Serve as a side to your soup, sandwich or main course.
