Sweet 'N Spicy Jicama Parsnip Slaw

Ingredients

  • 1 large jicama peeled
  • 2 medium parsnips peeled
  • 1-2 tablespoons fresh ginger grated
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons coconut oil
  • 1/2 cup apple juice
  • 1 apple

Directions

  1. Cut jicama and parsnips into large chunks and shred in the food processor.
  2. Transfer to a mixing bowl and add other ingredients except the apple. Thoroughly mix.
  3. Slice the apple and use as a garnish. Serve as a side to your soup, sandwich or main course.
