1 cup chopped cauliflower
1 cup chickpeas (aka garbanzo beans) flour
¼ cup ground chia seeds
¼ cup ground flaxseeds
½ teaspoon sea salt
1 teaspoon aluminum-free baking power
1 tablespoon coconut nectar
½ cup melted coconut oil
½ - ¾ cup water
Blend ingredients using ½ cup of water to start, adding more if needed. Allow batter to sit for 5 minutes. Check consistency — you want a thick, smooth batter. Add a few extra drops of water if needed.
Line two baking sheets with parchment paper. Scoop out ½ cup of batter and form round bun-shaped or square shaped sandwich bread on parchment paper. Leave ¼ inch thickness for each. Bake at 350 degrees for 30-35 minutes.
Cool for 15 minutes on wire racks. Enjoy with your favorite sandwich fixings.
